La capsaïcine, sous forme d'oléorésine de Capsicum ou d'un autre type d'extrait de Capsicum, constitue l'ingrédient actif des bombes aérosol de poivre de cayenne qui sont principalement utilisées par les forces policières pour aider à maîtriser un individu agressif ou violent.

Les piments forts du genre Capsicum (qui contiennent de la capsaïcine) sont utilisés, entiers ou moulus, dans l'industrie alimentaire comme agent d'assaisonnement.

La capsaïcine, sous forme de teinture ou d'oléorésine de Capsicum, est utilisée dans des préparations topiques pour le traitement de la douleur causée par l'arthrite, le rhumatisme, le lumbago, etc.. On la retrouve également dans certaines préparations pour empêcher les enfants de sucer leur pouce. Elle peut aussi être utilisée dans des solutions servant à empêcher de se ronger les ongles.
